Which material suits your cooking style?
The choice of material determines how the heat is transferred:
Coated pans (PTFE or ceramic): The all-rounders for low-fat frying. Ideal for delicate foods such as eggs, fish or pastries. Thanks to the non-stick coating, nothing burns, and cleaning is effortless.
Stainless steel pans: The indestructible ones. They can withstand high temperatures and are perfect for searing meat and deglazing. They are also usually dishwasher-safe.
Cast iron pans: For true professionals. Cast iron retains heat for an extremely long time and ensures incomparable roasting flavours. Over time, they develop a natural patina that acts like a non-stick coating.
Enamel pans have a non-porous, smooth surface. It is absolutely neutral in taste and odour and resistant to fruit acids. This makes them the perfect choice for allergy sufferers (as they are nickel-free) and ideal for slow braising or frying food with pinpoint accuracy. Enamel is also highly scratch-resistant and heat-resistant up to very high temperatures.
Wrought iron: The rustic choice for roast potatoes - highly heat-resistant and durable.
What you should look out for when buying
Before purchasing a new frying pan, check its compatibility with your stove. While almost all modern frying pans are suitable for electric and gas hobs, induction cookers require a magnetisable base. Also, look for an ergonomic handle and ovenproofness if you want to bake dishes directly in the pan.
Professional tip: Always use wooden or silicone kitchen utensils in coated pans to protect the surface and maximise the lifespan of the pan.
